Today, we’re back participating in the ONE Blog Hop and helping to spread the word about Sweet Potato Day today! (#sweetpotatolove)

Could you imagine if your community could make a big healthy difference by adding sweet potatoes to the local diet? In many communities this switch can be the difference from a child growing up malnourished or nourished.  Or a child needing eye glasses, or not.

According to Self Nutritional, the sweet potato is low in sodium, and very low in saturated fat and cholesterol. It is also a good source of dietary fiber, Vitamin B6 and manganese, and a very good source of Vitamin A and Vitamin C.

Next, we poached this recipe, originally from Awesomecusine.com, found on our Senior Editor, Purnima Ramakrishnan’s blog this week. Because everyone needs a fun sweet potato recipe from India. Why not?  Sounds delish!

Sweet Potato Curry (spicy side dish for breads and rice)

Ingredients:
250 gms Sweet Potatoes, boiled and sliced
1 medium Onion, minced
3 Green Chillies, minced
2 big Tomatoes, grated
1/4 tsp Turmeric powder
1/2 Coconut, grated
1 tsp Cumin seeds
1 tblsp Coriander seeds
3 Garlic Flakes
few Curry Leaves
4 Red Chillies
handful of Coriander leaves, sliced
Salt to taste

Method:

  • Grind coconut, red chillies, garlic, cumin and coriander seeds to a fine paste.
  • Heat 2 tblsp of oil and fry the onions and green chillies till soft.
  • Add tomatoes and spices and cook till the oil comes out.
  • Once the oil comes out, add sliced sweet potatoes and ground paste.
  • Put in 2 cups of water along with the remaining ingredients.
  • Cook till the curry turns a little thick.
  • Serve hot.

When in Uganda with Shot@Life this past October, I observed UNICEF’s Family Health Days including the administration of life-saving vaccines. Because the Family Health Days included additional dire global health services, I also got the chance to observe nurses measuring the upper arms of small children. A reading within a low range is an indication of possible malnutrition.  Seeing mothers first-hand being counseled on proper nutrition when their children didn’t pass this test really hit home. I can read about it, but witnessing it makes me feel even more committed to want to help and to rally the troops.  Let’s go, guys!
